Impingement cold air streams remove the static surface layer around the product, resulting in very fast freezing, with small ice crystals and thus resulting in a high-quality product. Impingement freezing is used for products with a large surface area in relation to weight and is ideal, for e.g., for: hamburgers and other flat products.
